The association of carved vegetables and Halloween goes back centuries. After the discovery of pumpkins in the New World they were used instead of turnips as they were larger, more colourful, more plentiful and easier to carve. The legend of Jack O'Lantern is that he was the first soul in Purgatory. When the Devil refused Jack entrance to Hell, he threw a lump of burning coal at him which Jack caught in a turnip. The first Jack O'Lantern!
